Instructions

1: Preheat oven to 400F.

2: Combine Gruyère and Parmigiano-Reggiano cheeses, set 1/3 aside.

3: Add heavy cream, milk, minced garlic, and thyme to the remaining cheese mixture. Season with salt and pepper.

4: Toss in potato slices until well coated.

5: Grease a casserole dish with unsalted butter.

6: Stack potatoes in the dish so that they overlap one another.

7: Pour excess cheese and cream mixture over the potatoes.

8: Cover with foil and bake for 30 minutes.

9: Remove foil and bake for an additional 30 minutes.

10: Remove from oven and sprinkle the reserved cheese on top.

11: Bake for an additional 15 minutes.
